The challenge
200 locations by 2030, and eleven already in build.
Aspire needed a consultancy partner to design and deliver the entire F&B programme infrastructure at pace across a three-tier lounge model, multiple international markets, and a tight timeline.

End-to-end F&B infrastructure built for global scale.
Lumière took on F&B consultancy across the full operation: menu development, SOPs, kitchen specifications, supplier strategy, training, crockery, a hot beverage transformation, and a new cloud-based Menu Management System.
The Results
From Zurich to Vilnius, Aspire's global F&B programme is now underpinned by a standardised infrastructure menus, systems, training and audit frameworks built to scale consistently across every new opening.
Zurich launched October 2025
